When you enter this old-fashioned West Village shop, the scent of freshly roasting beans fills your nostrils. Open bags of dark-brown beans line the shelves alongside jars of sugar, most expensive coffee beans-making equipment and tea accessories.

Porto Rico, originally opened in 1907 by Italian immigrant Patsy Albonese. Greenwich Village at the time was witnessing an influx of Italian immigrants, who opened businesses to cater to their food requirements. Albanese named the shop after the famous Puerto Rican Coffee she imported and sold - a drink that was so well-known that at the time, even the Pope would drink it.

Porto Rico offers 130 different varieties of beans, which includes those from around the world, at three locations, including Bleecker Street, Essex Market, and online. Porto Rico also roasts their own beans and offers wholesale distribution to 350 restaurants in NYC, Brooklyn and Brooklyn.

Peter Longo, current owner and president, was raised in the family bakery on Bleecker Street, where his father ran Porto Rico. He continues to run the business in the same fashion as his father did and grandfather.

Sey Coffee

It is located along Grattan Street in Morgantown, Brooklyn's Bushwick neighborhood, Sey Coffee is both a coffee shop and roaster. Tobin Polk, Lance Schnorenberg and their co-founders of 33 years, began roasting coffee in an apartment on the fourth floor, just around the corner in 2011. The name was Lofted Coffee. Local clients included Greenpoint's Budin and Soho cart services Peddler and Peddler.

Sey's focus on buying micro-lots or whole harvests, from single farmers has earned it the respect of New York City coffee enthusiasts. In the past they made a 6-bag micro-lot purchase of Danilo Dones Sitio Catucai 785 from Brazil's Espirito Santo region. The beans were carefully picked at peak ripeness, floated to remove defects and then dried fermented for 36 hours before being dried on the farm. The result is a blend that has hints of the melon and berry.

Sey's focus on holistically improving the wellbeing of growers, staff and customers extends beyond the walls of the shop. It utilizes composts and biodegradable disposables in order to keep waste from landfills. This helps to reduce greenhouse gases and helps nourish the coffee bean shop soil. It also does away with gratuity, a move that puts the baristas in a position to sustain their livelihoods and encourage them to focus on their profession.

La Cabra

La Cabra is a modern specialty speciality coffee beans company founded in Aarhus, Denmark in 2012. It began with a tiny store and a team of dedicated employees. The East Village store, which opened in the month of October last year, has been praised for its excellent pour overs and baked goods, overseen and managed by Jared Sexton. He previously worked at Bien Cuit, Dominique Ansel and various coffee establishments.

The shop utilizes a La Marzocco modbar and the plates and cups are designed by Wurtz ceramics in Horsens, a father and son studio. In a recent interview, Atlanta Coffee Shops General Manager Ian Walla revealed that La Cabra serves 250 different types of coffee per day and usually has seven or eight varieties available at any one time.

The roasted coffee is then whisked to the Eversys super-automatic brewing equipment and it is brewed to your requirements in under a minute. Customers can select from nine single origins and various blends.

Parlor Coffee

Parlor Coffee was founded in 2012 in a barbershop equipped with a single group espresso machine. It has since evolved into a bustling coffee roastery, whose coffee beans can be found in great cafes and restaurants as well as home brewers throughout the city. Parlor Coffee is dedicated to sourcing only the finest quality beans, which have all been through a long journey before they reach its roasters.

According to their own words the owners "have an unstoppable passion for craft and a conviction that good coffee beans (timeoftheworld.Date) coffee should be available to everyone." They achieve this with their earthy area on a residential street. Think compost bins, a chalkboard welcome handmade up-cycled products, and a minimally-decorated space.

They roast their own blends (there were six when I was there) and single-origins. However, they also host cuppings on Sundays, which are open to the general public. Imagine it as a brewery tasting room where you can smell and taste the ground beans. They range from earthy to chocolatey (one was similar to tomato!). It's a bit off the beaten track, but it's worth the drive.
